Rack of lamb with baked beets and vegetables a la Wellington, on a pillow of mixed curried white and brown rice
Step 1
Marinate a rack of lamb in herbs and olive oil, cook it sous vide for 1.5 hours under 55° С, and then grill the cooked rack
Step 2
Peel the beets, and bake them in an oven with vegetable oil, salt and herbs for one hour under 200° С
Step 3
Warm up spinach on cream butter with mashed garlic and sautéed shallots
Step 4
Put spinach on a dough sheet, place baked beets on top of it, add peeled apple bits and bilberries, cover with a layer of dough, grease with an egg, and bake for one hour under 200° С
Step 5
Boil rice, and dress it with coconut cream and curry seasoning
